Thermoblock vs Boiler: How Espresso Machines Heat Water

Not every espresso machine heats water the same way, and the method changes both how long you wait and how stable the temperature stays during a shot.

How a boiler works

A traditional boiler holds a reservoir of hot water at temperature at all times, ready to use. It typically takes longer to heat from cold — often several minutes — but holds temperature very steadily once it gets there, especially in dual-boiler designs, because it has real thermal mass to draw on during a shot.

How a thermoblock, thermocoil, or ThermoJet works

These heat water as it flows through a metal block or coil, on demand, rather than storing a reservoir. This generally heats up much faster from cold — Breville states its ThermoJet system reaches extraction temperature in about 3 seconds, versus a minute or more for its own thermocoil design — but has less thermal mass to draw on during a shot, since there is no large reservoir of pre-heated water behind it.

What changes in real use

A fast on-demand heating system is a genuinely practical upgrade for anyone who makes espresso at scattered, unpredictable times through the day, since it removes the multi-minute wait each time. It matters far less to someone who makes all of a household's espresso in one sitting each morning and lets the machine stay warm afterward.

The trade-off shows up mainly in unusually long shots or several drinks pulled rapidly back to back, where a boiler-based design's larger thermal reserve holds its target more steadily than a thermoblock's smaller, faster-responding one. For a single shot at a time, most buyers will not notice a difference in the cup.

Which to prioritize

If you want minimal wait and make espresso at unpredictable times: prioritize a fast on-demand system like ThermoJet. If you want the most stable temperature during longer or multiple back-to-back shots and don't mind a longer warm-up: prioritize a well-designed boiler, ideally with PID.

Common misconceptions about this spec

A common assumption is that a boiler is unambiguously "better" because prosumer machines tend to use them — in practice, boiler versus on-demand heating is a trade-off between two different goals (steady-state thermal stability versus fast time-to-first-shot), not a strict quality hierarchy. A well-tuned thermoblock or ThermoJet system with PID can hold temperature within a very tight window for a single shot; it simply has less reserve for several shots in a row.

The other misconception is that heating method alone determines shot quality. It affects consistency and workflow speed, not the ceiling on how good a well-dialed-in shot can taste — grind, dose, and tamp still do most of that work regardless of which heating system is underneath.

If a listing only says "fast heat-up" or "advanced heating" without naming a specific mechanism, treat that as a marketing claim rather than a verifiable spec, and look for the manufacturer's own technical documentation or manual instead.
